You check the keypad by pressing it to check how effectively it performs like whether the number and letters are displayed.. Check whether all the options in the phone are working fine.. whether u can make and end a call.. send messages.. etc..

Performance Can Fall in Broadly.
CPU Performance - Use benchmarks like drystone, antutu, spec int which measures MIPS and CPU Speed
GPU Performance - Use graphics heavy games and check fps and other subjective parameters like sluggishness or stuttering
Storage - Perform read /write operations
UX- General UI navigation and UI transition, app launch times
WIFI and Modem- Check data download/upload speed
