The code will crash because the function my_free is setting its own local copy of the pointer to NULL but the value of p in main is still holding its value. The way to make that work would be to pass a reference to the pointer, free the value it is pointing to and then set its value to null

void my_free(char** p) {
		free(*p);
		*p = NULL;
	}

	int main() {
		char *p = (char*) malloc(100);
		my_free(&p);
		assert(p == NULL);
		return 0;
	}

assert(p == NULL) will fail, bc p != NULL.
To fix it you have to pass p by its address:
void my_free(char** p)
{
free(*p);
*p = NULL;
}

...
my_free(&p); // now pass p by its address
...
